I know only little about the history of this region. There seems to be a very visible arabic influence (architecture, and even arabic writing on ancient buildings), while the people obviously use cyrillic letters. Is this observation true, do you have any insights?

Yes there is a historical influence from the Iranian empires. (http://en.wikipedia.org/wiki/Uzbekistan) Moreover, Uzbek is a Turkic language of the Qarluq family which still has a strong Persian vocabulary element.
